Use this calculator when converting harvest weights for recipes that call for dried mushrooms, tracking yields in a standardized dried-weight format, or calculating the value of your dried mushroom inventory. It is also helpful when buying or selling dried mushrooms — knowing the fresh equivalent helps you understand whether a price per gram is fair relative to what you could grow and dry yourself.

Tips for Best Results

  • Always dry mushrooms until they are “cracker dry” — they should snap cleanly when bent, not flex or bend. Any remaining moisture leads to mold during storage and significantly shortens shelf life.
  • Set your dehydrator to 125-135°F (52-57°C) and run it for 8-12 hours depending on species and slice thickness. Thicker species like lion's mane and king oyster take longer than thin-fleshed oyster mushrooms.
  • Store dried mushrooms in an airtight container with a food-grade desiccant packet (silica gel). This absorbs any residual moisture and prevents rehydration from ambient humidity.
  • Properly dried and stored mushrooms can last 1-2 years without significant loss of flavor or nutritional value. Vacuum sealing extends shelf life even further.
  • Lion's mane and oyster mushrooms have the highest water content of common gourmet species (around 90-91%), meaning they lose the most weight during drying. Keep this in mind when pricing dried product — it takes roughly 10-11 pounds of fresh mushrooms to produce 1 pound dried.
